1.所需材料称好备用。

2.盆里要干净无水无油,打入鸡蛋。

3.加入糖,盐,柠檬汁。

4.打蛋器高速打发。呈现鱼泡泡状。

5.继续高速打发。(这时候把烤箱提前预热150度,我的烤箱温度偏高)

6.打蛋器提起来在表面能画出“8”字型,停留几秒不消失,这个状态就可以了.

7.低粉提前过筛三次,过筛后的面粉更蓬松,更容易翻拌,面粉分两次筛人蛋糊中。

8.面糊翻拌的手法:J字型翻拌。翻拌均匀。(类似炒菜的手法,不可划圈容易消泡的)

9.牛奶和油混合在一起,缓缓倒入蛋糊中,边倒边J字型翻拌,翻拌均匀看不到干面粉就可。

10.糊糊从稍微高点的位置倒入模具中,这样能减少大的气泡。糊糊呈丝带般光滑。

11.稍微震两下,表面大气泡用竹签Z字型划掉。烤箱提前预热,上120度,下115度,中下层,烤50分钟。最后十分钟勤观察,上色了及时加盖锡纸。

12.烤箱提前预热150度,上120度,下115度,中下层,烤55分钟。最后十分钟上下150度上色。

13.烤好后的海绵蛋糕,不用倒扣,晾凉脱模。

小窍门&温馨提示
鸡蛋如果在冰箱里放着的要提前拿出来回温一下,蛋白糊糊一定要打到位。图中使用的是ACA烤箱,容量38升,我家烤箱温度偏高,仅供参考,亲们可根据自家烤箱来调整温度。
